ZTB Farmhouse

Grow better before bigger. Our farm is where Zak the Baker puts down roots, in the soil, the seasons, and the culture of South Florida.

Grow Better Before Bigger

When it came time to grow, we chose to grow better before growing bigger. Rather than scaling up, we planted roots, expanding into organic agriculture with a farmhouse of our own.

Ours to Work

We bought the farm, and we tend it ourselves. Owning and operating our own land keeps us close to the soil, the weather, and the turning of the seasons, the same rhythm that has always guided the bakery.

A Subtropical Terroir

Miami’s agriculture is among the most singular in the country. Subtropical and abundant, shaped by Caribbean, Latin, Jewish, and Eastern European hands, it grows flavors that exist almost nowhere else in America.

Porous Walls

We are a traditional bakery, but our walls are porous. We keep the old crafts intact while letting the land, the seasons, and the many cultures around us come through. That exchange, tradition meeting place, is our food culture.
